How does an NRPE daemon work with multiple Nagios servers?

It doesn't need to. Each of the servers simply queries the NRPE daemon. 
You just need to make sure that both Nagios servers are listed as 
allowed hosts in the NRPE daemon.

Also keep in mind that the NRPE daemon will run then same check twice, 
once for each Nagios server. And that also means that the two Nagios 
servers may not see the same check results.

If that is important for you, instead look at having only one server 
query the NRPE daemon, and then forward the check results to the other.
