Look into using NSClient++ and use it to access the Windows performance 
counters to get this type of information. Microsoft's support of SNMP is 
not all that great.

If you don't want to install anything on the Exchange server, you could 
also look into using WMI to get the same information remotely. I'm not 
sure about how to integrate that with Nagios, though.
