Off topic question - how to change domain name in sendmail.

Are You sure you used the -a option with mail(x) ?

I used exim as my MTA with nagios:

in exim.conf;
trusted_users=mail:nagios

in host_notify_by_email.command.cfg;
printf "Blah-de-blah-de-blah" | mail -s "serverdown,serverdown" 
$CONTACTEMAIL$ -a "From: nagiosadmin at your.domain.here"

This probably doesn't help with sendmail, but it's a start.
