strange check interval behavior

Usually, yes, but technically it just means "5 interval lengths
between checks", where the interval length is set in the
"interval_length" directive in your nagios.cfg file.
In a default installation this is set to 60 (seconds).

I guess you've set your interval_length in nagios.cfg to 15 instead of
the usual 60.  (5 * 15 = 75 or 1 minute and 15 seconds).
