Checks arent frequent enough

notification_interval specifies how often you get alerted after the
initial alert is sent.  3000 minutes is just over 2 days.

There is plenty of info on all this stuff in the documentation.  If
there's one thing you can't fault the nagios folks on, it's lack of
documentation.
