Use check_imap_receive from http://apricoti.pbwiki.com/NagiosCheckEmailDelivery

I have used this in conjunction with a Gmail account set to forward to
an IMAP account I have access to. Send the email to Gmail, gets
forwarded to your IMAP account, use check_imap_receive.
