Create a time period definition that excludes your maintenance window
(http://nagios.sourceforge.net/docs/1_0/xodtemplate.html#timeperiod) and
assign it as the check_period for your services on that host
(http://nagios.sourceforge.net/docs/1_0/xodtemplate.html). The services
(and hence the hosts) will not be checked at all during that window. If
they are still down at the end of the window you'll receive
notifications as usual.
