spoofing notification from address

My Nagios system is running on a server we rent in rack space (with a set 
host name that I cannot change, this server does many other functions apart 
from Nagios) and all notifications come through with the from address as 
nagios at serverXXXXX.uk2net.com. This doesn't help when people receive these 
emails and try to reply to them as I really want them to send email to our 
helpdesk address.

Can I spoof the from email address to be our helpdesk@ email address in any 
way? I had an idea of editing the notify-by-email command in 
misccommands.cfg, but can find anything in the mail manual to help me.
